A Italian fresh cheese that's white in color and mild in flavor. It is mostly made from cow's milk, although those made with water buffalo milk are considered to be the best. Fresh mozzarella is usually packaged in brine; it has a soft texture and a sweet, delicate flavor. Regular (or low moisture) mozzarella is drier, and has a semi-soft, elastic texture. It's popular in pizzas and lasagnas because it melts well.
