So recently I posted an article on making a welsh rarebit over at articleinkpress and thought I'd share it will you over here too.
It's essentially a posh cheese on toast recipe - but is really tasty. Enjoy!
Ingredients:
- 100ml of strong, dark beer
- 100g of grated cheese - perferably a mature cheese as this helps create a richer taste. (We sometimes substitute some of the grated cheese for parmesan for extra zing!)
- 25g of butter
- 25g of plain flour
- 1 large egg yolk
- Freshly ground black pepper
- 1tsp of mustard
- 1tsp of Worcestershire sauce
- 4 slices of good quality, thick bread.
Instructions to make the Welsh Rarebit:
Preheat your grill.
Start by melting the butter in a saucepan, gradually stirring in the flour until you end up with a lump-free, smooth paste. Stir in the beer making sure the beer mixes fully into the paste and simmer on a low heat until the sauce is thick and smooth.
Add the remaining ingredients to the saucepan (with the exception of the pepper) and stir gently until the cheese melts into the sauce. Once complete add a few pinches of pepper to taste and set the sauce aside making sure it is off the heat.
Carefully toast your bread on BOTH sides under the grill and remove.
You may need to quickly reheat the rarebit sauce to make it easily spreadable again and then spread it thickly over the toasted bread, making sure you cover each piece entirely to ensure it does not burn. Then return the bread to the grill and toast until the rarebit sauce is lightly brown and bubbling.
