Can anyone tell me if sausage casing is edible? I've seen them remove the casing from the sausage before cooking on cooking shows, but the meat breaks up when I remove the casing from Italian sausages. Do you cook with the casing on and can you eat it? |

yes, sausage casing is edible.
most of the time you see people removing the casing it's because they want the meat "of that particular flavor" but not in "sausage form" - that is, they want the meat crumbled up in the dish. you can buy fresh sausage 'not in the casing' - but rarely can you get the varieties of spicing/flavors offered in the cased products. |

I like the "snap" of the casing when I bite into it! Dunno why. |
