A while back I came upon a recipe for "ice cream" that is hot but melts when it cools instead of the other way around. It was on a post Ideas in Food made (http://blog.ideasinfood.com/ideas_in_food/2005/12/a_recipe_for_su.html).
Hot Vanilla Ice Cream
306 g whole milk yogurt
230 g cream cheese
80 g agave nectar
154 g water
1 Bourbon vanilla bean scraped
pinch of sea salt
11.55g Methocel food gum SGA150
In it they use the methocel food gum. I tried to order it but it seems you can only buy it in large quanitities. I'm not about to do that. But I'd still love to try this. Does anyone have any ideas about how this same reaction could occur without using this particular chemical?

the 'reaction' would not happen at all.
one of methocel gum properties is that it gets thicker as it gets warmer and more liquid as it cools.
without it, you've got flavored yogurt.
available on Amazon in 1 lb size - which, at 11.55 grams a batch - will last quite some time . . . |

I had a chance to eat fried ice cream 2 years ago when I was visiting Asia. It's quite delicious. |

I just moved to Tokyo and there is a fried ice cream shop literally next door to me. I tried it for the first time last week and it was... interesting to say the least.

I just received the methocel I purchased from Amazon. (Thanks for the source Dilbert.) It was about 30 bucks for the one pound container, and even though less than half an ounce is needed in the recipe, the entertainment value alone made this worthwhile.
I will let you all know how it goes when I have a chance to play with the stuff. I can't wait to try it! |

I'm from Indonesia. Here we a new food called "fried ice cream". Actually it is a slice of bread that you put some ice cream inside, then you roll the slice of bread, and finally you fry it. So when you eat the fried bread, there is ice cream melts. Yummy.

Well i love your hot vanilla ice cream recipe. I just made it last
night and that was so delicious. My all friends and cousin like this
ice cream. Thanks for your self-sacrificing labor, of love putting
together the Perfect Scoop. In my opinion it’s the Perfect Ice cream
plus recipe book. |
