My DH wants to make a tiramisu for my birthday, and the recipe calls for sweet Marsala. I picked up Marsala at the grocery store, before I knew about the "sweet" specification. The bottle I bought says it has 1 1/2% salt. Did I get the right stuff, and if not, can I use what I bought by modifying it somehow?
Help!

If it contains salt it's probably cooking marsala -- which could be ok in a savory dish, but I wouldn't bake with it. Go to the wine section of the grocery store or to a store that specializes in wines and try picking up a bottle of real marsala instead. |

I ran into the same problem a while back. The wine with 1.5% salt is found in the cooking section, and for the same price of cheaper, you can buy a bottle of the real stuff (that you could drink if you were so inclined) in the wine and spirits area, by the sherry. I had half a bottle of the salted stuff left when I finally bought a bottle of the real stuff. That was a year ago, and I still have that same half bottle.
Try tasting the salted marsala, and you will realize that it won't work in a sweet baked good at all.
I'm not even sure why they sell it salted at all, other than to discourage people from drinking it (since they don't card for the salted stuff as far as I know). Of course, if you were so hard up for alcohol that you would resort to overpriced cooking wine, then I supose the salt wouldn't do any firther at stopping you.
If I wan't my wine to have 1.5% salt, I will add it myself. |
