When is it necessary to cover pots. Is a lid necessary when boiling pasta or potatoes. If so, why would it need to be covered.
By covering the pot is the heat retained resulting in a faster cooked product and/or does it serve other purposes.
Also what is the difference between covering or partially covering a pot.

Just consider the lid like a valve for regulating the temperature and/or moisture content of whatever your're cooking.
Valve closed and your pot's temperature will rise at a greater rate, like getting ready to boil pasta. Or, if you're making a pot roast and you want to reduce the liquid, partially remove the lid an inch or so to let the moisture out. Or remove the lid entirely to reduce a lot of liquid. Keep in mind though that if you remove the lid entirely, you may have to jack the heat to keep the simmer going.
Lids are good for keeping things warm while another dish is finishing up. Or, depending on where you are (camping), it keeps bugs out. It's also good as a device that makes noise when moved. This way you know when someone is poking about when they shouldn't be.
Don't worry about it at first, it'll take some practice. Just take mental notes of what does what and how your final product came out. Then next time you can try something a little different.
