Today I spent about 6 hours at Whole Foods making guacamole. I had a table set up with all the stuff one puts in guac (my mise en place, to be all cheffy) and all the utensils. I made guacamole to order, crafting the perfect flavour for each persons taste

My table had:
avocados
red onion
white onion
cilantro
garlic
jalapeno
tomatoes
salt
pepper
cumin
cayenne pepper
chili powder
coriander
lemon juice
lime juice
Dave's insanity
smoked Tabasco

In 6 hours I went through just over a gross of avocados.
