I just cooked some chicken breasts today on kabobs.
The marinade was:
-Tbsp Pineapple Juice
-2 Tbsp Mango juice and pulp
-tsp cinnamon
-tsp allspice
-Tbsp honey
-2.5 Tbsp sweet and sour sauce
-2 Tbsp sugar
-tsp lemon juice
The kabobs had:
-The chicken
-Mango
-Pineapple
My chicken tasted creamy after it was cooked on a grill.
How does chicken get creamy, and what can I do to stop this??? |

Did your chicken have the texture of creaminess or did it actually taste like cream (slightly sweet concentrated dairy flavor)? If it had a creamy texture, this may have been because of the marinade in pineapple juice which is rich in enzymes that break down the protein. It tenderizes the meat, but may lead to a mushy consistency if overdone. |

Yea. It was a creamy texture, so it was probably all the pineapple juice. Good call. |

Mango also has those enzymes-- this marinade is perfect for breaking down and flavoring a cheap, tough steak, but it's too powerful for chicken, which can be tenderized with moderate cooking. |
