Made the chocolate souffle last night and it was excellent. I use an egg beater rather than a whisk for the whites. Faster and easier. Bakers choclate has come out with a 70% cocoa butter choclate in their anniversary edition which I'll try next instead of the Scharffen-Berger 62% . |
