I am no slouch in the kitchen and have been very successful making various praline style leches quemadas candies. But there is one type that has me flummoxed. There's a little candy factory in Kingsville, Texas called Moreno's. They list as their ingredients only sugar and milk (and vanilla and preservatives). But their leche quemada is extremely creamy and has this spectacular mouth feel, almost like oil or cream is secretly added at the end.
I've worked with recipes which have milk and sugar as their basics, where you slow cook the mixture until the milk solids brown (caramelize) and the brew thickens.
I've tried half and half also.
I haven't tried any of the myriad recipes that call for canned sweetened condensed milk or evaporated milk because I don't think Moreno's uses those.
So here's my request/challenge.
If anyone wants to have some fun with me reverse engineering this brand of candy, I will be pleased to mail you some so that you can test it.
Might be fun.
