Hey guys, i've been missing the Spanish Iberian Ham for a while so i bought this one from a spanish shop i met at my visit to Madrid a few weeks ago and it was freakin delicious. Have you ever tried it? Any experience youd like to share? The Serrano Ham is kinda good but it can't be compared at all with the iberian, check this, its amazing the amount of work and care the put in the pigs to get the best hams: https://en.wikipedia.org/wiki/Jam%C3%B3n_ib%C3%A9rico |

Hi, I bought also some Iberian Ham Pieces in Madrid, there re some very good places, and they told me the best one comes from Huelva.
Its supposed they eat acorns, and the taste is completely differente, and the price also hahaha.
The got this ham also in internet if someone wants to check , all typical spanish products. |

it's really good stuff.
for many years it was not available in USA because of import 'health' restrictions.
fortunately, removal of the hoof portion has allowed import of "whole" hams.
heh, I'm not gonna' eat the hoof anyway, so I'll accept the compromise....
be a bit wary of sliced pre-packaged stuff.... many suppliers seem to take lots of liberties with the source and origin of this ham.
on a recent Las Vegas bash at L'Atelier I got an incredibly generous portion:

it's a dried ham product - most often served as an hors d'oeuvre with "side" condiments.
it's not something one would cook up in a dish, altho I suppose it could be a flavor accent - similar use as prosciutto. |

yes it would make a pizza proud - the real stuff is quite expensive - 2 ounces ~60 g = 25-30 USD
that'll be an expensive - but good - pizza |
