When grilling chicken breast in a Big Green Egg and the chicken will have to be held one hour before serving at what temperature should the breast be taken off the grill and at what temperature should the oven be in order for the breast be 165* when being served. Should the chicken be put into a baking dish and covered with plastic wrat or should the chicken be kept in foil package? |

if you cover it, you can expect 5-10' rise from "carry over"
big piece / little piece / bone in / boneless will affect how much heat is retained to 'carry over' |

Take off the grill at 160°F and keep in the oven at 145°F. Put chicken in a baking dish and cover with foil. |
