I am wondering about measuring taste in food and liquid. Came across "refractometer" measuring the sweetness / BRIX value. Anybody can help me out and explain a bit more in this? How accurate and wil this work in commercial kitchen? |

It just tells you the sugar content and is only accurate on clear liquids, like white grape juice. I have used one in winemaking, but I prefer to use a hydrometer, it isn't as accurate, but it works in all liquids. |
