Oat Dates Square
Ingredients
Dates Filling
3 cups pitted dates
1 cup water
1 tsp vanilla essence
Oatmeal Crust
1 cup oats
1 cup wheat biscuits
1 cup superfine flour
¾ cup brown sugar
½ tsp sodium bicarbonate
¼ tsp salt
230 gm cold butter
Methods
Dates Filling
Place pitted dates and water. Cook over low heat. Stirring occasionally until dates ore soft and absorbed the water.
Remove from heat, put vanilla essence.
Let cool in room temperature. Mashed until fine.
Oatmeal Crust
In a bowl, place oats, wheat biscuits, flour, sugar, baking soda and salt.
Using rub in method to combine the ingredients until the mixture is crumbly and begins to come together.
Press 2/3 of mixture onto base of prepared pan.
Spread the date puree evenly over the oatmeal crust.
Sprinkle the remaining dough evenly over the top of the dates. Press down gently to compact.
Bake for about 30 to 40 minutes at 180 deg.Celsius until golden brown.
Once cool, cover pan with aluminium foil and place in refrigerator for one hour until firm enough to cut into squares.

The recipe looks very tasty. I am unsure what kind of wheat biscuits would I use? At the store I saw graham crackers that are made of wheat flour, (and salty crackers called wheat biscuits). Maybe a not too sweet type cracker/cookie would that be more acceptable and if not, what other suggestions could I look for?. I live in NYC. Waiting to try this recipe. |
