Olive Oil Roasted Radishes
Ingredients
* 1 bunch radishes
* 1 tablespoon olive oil
* 1/8 teaspoon salt
* 1/8 teaspoon pepper
Directions
Scrub the radishes with an abrasive plastic pad reserved for vegetables, followed by rinsing. Remove tops and leaves.
Cut the radishes into 1 inch (3 cm) chunks.
Spread the radishes out in a glass pan, or baking sheet lined with foil.
Drizzle with lighter, higher smoke point olive oil. Sprinkle with salt and pepper to taste.
Roast the radishes in an oven set to 425 degrees F (215 degrees C) for 20-25 minutes or until golden and tender, serve hot.
May be served with balsamic vinegar or balsamic glaze before serving.
This recipe softens the radishes, but gives the exterior an appetizing texture. |
