Darto pans
an alternative to cast iron / etc / has been the "steel pan" - any number of manufacturers - Darto (from Argentina) is one - more reasonable
in price that some others.
the Darto black iron "steel" - seem to be well thought of so I sprung for one.
this is a 10" - stamped from one piece - no rivets/welds/joints - $100, shipping included. fast delivery!
they normally do 3 mm thick, but explained on their web site somebody booboo'ed on the raw material order and they got 4 mm.
this is a 4 mm version. should sear like a banshee!

flipped. a bit extra oil used since the pan was non-seasoned.....
absolutely no sticking - shuffled like Teflon! and this is the _first_ cook in this pan... hot pan, hot oil, dry fish, no stick.
on a rack for an oven finish
divvy for two . . .
there's always leftovers . . . hmmm, is that a mebbe?
