I have come to a banana bread recipe that I'm pretty happy with - getting a more bread-like than cake-like texture. I don't really understand how the different ingredients affect the rise, and I'd like to get a bit more rise without changing the texture.
So I'd like to know about changes to rise or texture by:
1. Increasing or decreasing flour
2. Substituting some bread flour for all purpose flour
3. Using more or less banana.
4. Adding nuts or other hard ingredients.
Any help would be much appreciated  |

it would be most helpful if you could post the full recipe -
much easier to 'trouble shoot' that way. |

I'm not sure whether increasing/decreasing flour would affect rise but increasing/decreasing flour would affect the texture, I believe.
Changing the type of flour would affect both rise and texture.
Adding/Reducing bananas and nuts would not affect rise or texture.
Just my personal experience though =) |
