There wasn't much turkey left after Thanksgiving, but a lot of stuffing. I picked up some ground turkey and butchered Alton Brown's meatloaf recipe. I won't share the specifics of what I did because I don't think they are quite ready for polite company, but the idea seemed worth sharing.
I layered the prepared ground turkey in a loaf pan, laid a "log" of stuffing on top/in the middle, and covered with another layer of turkey.
The next experiment will build the turkey up higher in the pan. I'm also thinking of a version with shredded roast turkey. Comments and ideas are welcome. |

That stuffing in the middle thing makes me think -- what about taking the leftover stuffing, and then putting it in the middle of a chicken breast or turkey breast roulade?
Especially if you did it with some sort of pan sauce that was almost a gravy, this is starting to sound pretty good -- like a vastly oversimplied Turducken with just one of the critters... |
