A lot of people make a complete mess of filleting fish, myself included.
I was out Sea fishing from the rocks in North Wales with a couple of friends a week or two back
Here's a posting that one of my fishing buddies put up on his own forum, and with his Permission he has allowed me to post it here.
Fish, Gareth and myself caught these off the rocks yesterday.
I got my camera out to record how Fish did the filleting. I reckon that the many photographs that follow, should be all that you need to know how to fillet fish in the future.

That was awesome. I've never gotten much practice filleting fish, but on one trip to Alaska, I must have watched the professionals do gut and fillet for a couple hours (people pay to go on fishing trips and bring it back to the dock where the messy stuff is taken care of by people who are VERY fast with their hands). |

Excellent series of pics. I've not seen the butterfly fillet before. Also can't say I've recently viewed 11 photos of clearly portrayed fish entrails. Makes me hungry.
Like Mr. Chu, I've watched pros work the docks in Ocean City, Md where the catch is dolphin, tuna, and a few marlin. VERY fast hands is an understatement. Add in VERY sharp knives and you have VERY intense spectating. |

I wondered if you knew how to pop the Y-bone out of a Northern Pike without ending up with two pieces? Very impressive photos. |

Unfortunately No.
Here in the United Kingdom all of the Pike fishing is catch and release. |
