Three types of Peanut Brittle are:-
NB: Use any nut mixture you like, sesame seeds are a nice touch.
Macadamia's and Pistachios in the butter scotch with some sesame oil in with the butter is the best, I am told...
I wouldn't know, I dont eat sugar, LOL but I cook for others all the time.
powdered nuts or sesame seeds on the buttered trays before the mixture is poured out and over the top before it cools in popular also.
Just add the toasted nuts to one of the mixtures below
1 Kg of sugar to 1/4 to kg of nuts - mix it to personal preference
spread out on buttered baking paper.
break up and store in air proof jar.
1. Toffee Peanut Brittle
1 Kg of sugar 3 Table spoon of water
heat to a simmer with minimal stirring till mixture sets hard when dropped into cold water.
I heat till I detect the first whiff of burnt in the smell rising from the pot,
then drop the nuts in, stir and spread out on buttered baking paper.
2. Candied Peanut Brittle
800g of sugar 3 Table spoon of water
heat to a simmer with regular stirring till mixture sets hard when dropped into cold water.
I heat till I detect the first whiff of burnt in the smell rising from the pot,
Stir in 200g sugar vigorously then drop the nuts in, stir and spread out on buttered baking paper.
3. Butter scotch Peanut Brittle
1 Kg of sugar 3 Table spoon of water 200g unsalted butter
heat to a simmer stirring the butter in, till mixture sets hard when dropped into cold water.
I heat till I detect the first whiff of burnt in the smell rising from the pot,
then drop the nuts in, stir and spread out on buttered baking paper.
4. Crumbled Peanut Brittle
1 Kg of sugar 3 Table spoon of water,
1 Tablespoon of citric acid
heat with minimal stirring till mixture sets hard when dropped into cold water.
I heat till I detect the first whiff of burnt in the smell rising from the pot,
Then stir in 1 heaped teaspoon of baking powder with the nuts.
stir and spread out on Pour into buttered baking trays, and cake tins.... a little go's a long way
You MUST work fast and have lots of room for the rapidly rising mixture.. |
