Hi,
Is refrigeration must for brining meat? I was thinking about brining chicken thighs for an hour before roasting. Is refrigeration necessary for brining to work? If so, why?

no - you're good to go at room temps.
the "food safety" types look at four hours max at temps between 40'F and 140'F - guidelines for thought.
if you live in the tropics and set the brining chicken out in the sun.... no, don't do that. |
