There is an entire genre of butter cookie recipes from E. Europe which uses the yolks from hard-boiled eggs in the dough - in addition to the entire raw egg.
I've never made one of these recipes but I am intrigued. Does anyone know what the addition of hard-cooked yolks does to the taste or the consistency of the cookie? |

I just ran across a recipe that calls for 3 hard boiled yolks and 3 raw yolks to be used in the dough. Is there anyone out there that can tell us what the hard boiled yolks do to a dough? Thanks! |
