Increasing sugar can also help to soften ice cream (but you can only do that to a certain point before the ice cream becomes unpalatable). In general, the only real solution (and the one employed by ice cream shops) is to have a freezer at a warmer temperature for serving. I keep one freezer at around 5F (-15C) for this purpose.
