Haven't seen any recipes for clear quahaug chowder. I make it for the Elks authentic clambakes and here's how simple it is. Saute alot of chopped onion in bacon grease: more than you think necessary. Don;t worry if they brown a little, adds flavor. Add chopped steamed open quahaug meat - plenty. Add the juice from the steaming of the 'hogs' along with diced potatoes. Add a goodly amount of black or white pepper. Fill the rest of the pot with water and bring to a boil. Simmer 'till the potatoes are tender, taste and add salt to your satisfaction and serve. I like to sneak a nice chunk of butter in towards the end - smooth. Great with clamcakes.
