Hi everyone,

I'm new to this forum, and as you can probably tell from my Username, I'm a sausage freak.

I love them, but not the usual junk you get in the supermarkets and butcher's here in Australia.

I grew up in England, where they made wonderful sausages, but when I came to live in Australia, I found they were made from all the leftovers and were full of gristle.

I have been making my own for about a year now, as I can control the ingredients.

I love food, have my own smoker, and will shortly be able to make bacon, hams and hopefully within a year, cheese.

I will be searching this forum for likeminded people and threads, and hopefully will post some recipes for you to try.

I'm looking forward to making some new friends.

Mike.
