Made this to go with some grilled sirloins. Fantastic!
4 medium ripe tomatoes, diced
2 tbsp extra virgin olive oil
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1 tsp dried parsley
1 tsp dried basil leaves (flakes)
Mix all ingredients and refrigerate for 1/2 hour before serving.

I've made this before, and its pretty much a guaranteed crowd-pleaser, and is super easy! To jazz it up a bit, try:
-Replacing the dried basil with fresh basil leaves
-Using a mix of different tomatoes (red, orange, etc.)
-Add buffalo mozzarella, sliced thinly |

Ya, the variations are unlimited. I've always been a fan of tomato & cucumber salad. Just add some home made italian dressing or italian seasoning with vinegar and oil. |
