I love the Lean Cuisine Alfredo sauce and would like to be able to make my own. Does anyone have any good low Calorie Alfredo sauce recipes?
Also, I'd like to make the equivalent of special K snack bars, but don't know what to use to hold it together... Any ideas? I'd like low sugar options.
Please post any good ideas/recipes/resources |

Back in 1980, I drove off a boat ramp with my brother's Toyota doing 75mph. He still doesn't know about it! Does that count? |

There are some books out there and some magazines that address low-cal cooking that may give you an idea for an alfredo that would mimic the LC brand. There are three keys to low cal cooking:
1) lo-cal ingredients: e.g., you cannot use butter and heavy cream and expect that the result will be lo-cal. The only exception to this rule is very small quantities, just to get taste or flavor but no more. When I make alfredo I cut the cream with 2% milk (but see #3).
2)Judicious use of spices and flavorings that give taste w/o caloric load. Parmesan cheese is very strong but surprisingly low in calories as it is a "hard" cheese. Go for a low fat variety and doubl the savings.
3) Lo-cal texture techniques: these are a bit more complex and require cooking skill. Much of what makes ice cream taste better than ice milk is just that smooth and creamy texture. That creamy texture costs the cals though. For the alfredo, I use egg beaters instead of a high-cal yolk.
No real "secrets" and, of course, your tastes may vary from mine. What I find is that after you start eating less fat, you crave less fat. Less salt, you crave less, etc. I have gotten to the point that a soft drink sickens me with how sweet it is. |
