Here's an easy, tasty, quick recipe for feeding anywhere from one to fifty people:

1 lb ground beef
1 med onion, diced
1-2 tbsp ground cumin

Brown the beef in a 4 qt stock pot over med-high heat. Add the onion & cumin to the beef as it is browning. Once beef is browned and onions are translucent, skim off excess fat, if present/desired. Add:

2 cans great northern beans, drained and rinsed
2 cans chicken broth
1 14 oz jar green salsa (mild/medium/hot as taste or guests dictate)
2 tbsp chopped cilantro

Turn heat to high and bring to a boil, reduce heat and simmer 20 minutes. Garnish with:

additional chopped cilantro
sour cream
warm tortillas

Serve and enjoy. Tastes even better the second day. Freezes extremely well.

The recipe is simply and very tasty. I've made vegetarian versions using veggie 'sausage' crumbles and vegetable stock, 'fancier' versions using spicy grilled pork or chicken and the regular version as directed above many times - it never fails to satisfy.
