I made a variety of refrigerator pickles last night...all loosely based on recipe guides from Alton Brown or RecipeSource.com

http://www.recipesource.com/fgv/pickles/00/rec0005.html

From left to right:
Pickled Beets & Onions
Apple Pickles with Clove & Cinnamon
Bread & Butter Cucumber Slices
Bread & Butter Cucumber & Onion
Bread & Butter Cucumber, Onion, & Garlic
Bread & Butter Cucumber, Onion, Garlic, & Chiles
Pickled Brussel Sprouts & Carrots
Pickled Broccoli & Carrots

I actually was finished at the Brussel Sprouts, but I had about a quart of pickling liquid left in the pan and all I could find to pickle was a bag of frozen broccoli and carrots. I steamed the veggies in the microwave for 4 minutes and threw 'em in the jar. Not sure how they'll come out.

And the brussel sprouts are an interesting idea -- never would have thought of that. Let us know how those turn out -- I may try that one myself.
