This recipe will guide you to making the best chicken satay in the world (I think)
You need:
For the chicken marinade
2 tbsp ground coriander seed
3 tbsp corn flour
2 tbsp chopped garlic
6 tbsp oil
4 teaspoon salt
2 teaspoon ground white pepper
2 kg chicken thigh (the fattier they are the better they taste)
For the peanut sauce
500 grams of roasted peanut (no skin)
1 tbsp palm sugar
4 tbsp sweet soy sauce (you can get them from Asian groceries)
*if available, buy “ABC” or “Kecap Bango” brand
Salt to your liking (less for sweeter sauce, more for saltier sauce)
Pepper
Water
For brushing
Sweet soy sauce
Cooking oil
Cooking:
Cut up chicken into thumb size chunks. Mix all the marinade ingredients. Then, using a food processor, mix all the peanut sauce ingredients and add water to adjust the thickness. You want to have the thickness of salsa Americana (tomato ketchup or sauce as we call it here). Keep in mind that you need to adjust the sweetness or saltiness to your liking. This recipe is written to my own personal taste. Then, simmer the sauce only until it starts to bubbles up.
Once you have made the sauce, you need to skewer the chicken. Then throw it onto the barbecue. Whilst cooking you need to brush the chicken with the 50/50 sweet soy/cooking oil mix for 3-5 times of each side.
Then serve it up with the sauce, a slice of lime, rice and some prawn crackers. Oh, don’t forget the Riesling. |
