In making limoncello, the recipe calls for the zest of 10 lemons per 750 ml of 100 proof vodka. How much of lemon extract should be use instead of the 10 lemons zested??

this should help:
http://www.bhg.com/recipes/how-to/cook-with-fruits-and-vegetables/zest-substitute/
https://www.leaf.tv/articles/how-to-substitute-lemon-extract-for-lemon-zest/

it says basically 1/2 by volume

one "medium size" lemon should make on the order of 1 tablespoon of zest....
