with Fall coming, soups are on the menu more. This has become a favorite out of our kitchen. a half batch makes two meals for two - and 2-3 days age the fridge makes it, if anything, better.
we use fresh
- leeks
- green beans
- carrots
- corn, cut off the cob
- tomatoes - best from the garden
these are on the trailing edge now - but still available.

Ingredients
Half-batch
2 tablespoons olive oil
1 cups chopped leeks, white part only (from approximately 3 medium leeks)
1 tablespoons finely minced garlic
Kosher salt
1 cups carrots, peeled and chopped into rounds (approximately 2 medium)
1 cups peeled and diced potatoes
1 cups fresh green beans, broken or cut into 3/4-inch pieces
1 quarts chicken or vegetable broth
((tried both chicken and vegetable but beef broth/stock is better IMHO))
2 cups peeled, seeded, and chopped tomatoes
((or not; I just quarter then half the qtrs using the entire tomato))
1 ears corn, kernels removed
1/4 teaspoon freshly ground black pepper
1/8 cup packed, chopped fresh parsley leaves
((1 teaspoons freshly squeezed lemon juice - not to our taste; not used))

the knife prep takes ca. 20 minutes - 10 minutes to sweat down the onion/leek.
I would suggest two hours at a simmer as a minimum cook time - often I do it early in the day, simmer, let cool, then reheat for service. or refrigerate overnight. |
