remember the ancient lasagne stuff - ooey, gooey, cheese-y, really good stuff? before the advent of instant water and 5 minute microwave lasagne?

here's a an excellent recipe to revisit, it's lip smacking good.

based on:
Better Homes and Gardens
1968 "New Cook Book"
p 123

Lasagne

1 pound Italian sausage
1 clove minced garlic
1 tablespoon whole basil
1.5 teaspoon salt
1 pound can of crushed tomato - not drained
12 ounces by wt tomato paste

10 ounces by wt lasagne noodles
2 large eggs
3 cups Ricotta cheese
0.5 cups grated parmesan cheese
2 tablespoons parlsey flakes (dried)
1 teaspoon salt
0.5 teaspoon pepper
1 pound mozarella cheese

brown meat slowly - spoon off excess fat.
add: garlic, basil, salt, crushed tomato, tomato paste
simmer about 30 minutes; stir regularly

cook noodles in salted water & drain

beat eggs
add: ricotta, parmesan cheese, parsley, salt, pepper

in a 13x9 pan:
layer half the noodles, spread with half the egg plus cheeses, etc., mixture
spread half the mozarella cheese
spread half the meat sauce.

add second layer of noodles repeat the layer of egg mixture, mozarella and meat sauce.

bake at 375'F about 30 minutes; allow to rest 10 minutes prior to service.

Yep, still make it that way, almost exactly that way, which is kind of odd because I don't think I've ever used a recipe.

I've become a big fan of Pomi tomatoes. I used the crushed, but guess they have other kinds. They come in a square Tetra-pak. Try 'em some time.

I spent 10 minutes staring at the 30-40 feet of tomato products attempting to decipher a can a crushed tomatoes.

I gave up and bought whole tomatoes - have knife.....

never seen the tetrapaks here - will have to keep an eye out for them.

They are Italian, slightly acidic, and don't have that canned taste. And with Romas at $2.99/lb, not much price difference, either.

...Pomi tomatoes...

curiously, these have recent appeared at my local Giant. in a softbox/Tetrapak(?) available in both chopped and 'strained' (whatever that means....) variety - 750 gram container.

also noticed Hunts "Sauce" in a sof tpak - 14.8 oz size. not a lot to the description.
