Drop Biscuits

The classic southern style drop biscuit - very quick, simple ingredients, easy to make.
Makes 4-6 biscuits, depending on size.



Preheat oven to 450’F

In a bowl mix
450 g AP flour - this based on Ceresota Unbleached AP
3 tsp baking powder
½ tsp salt

Cut in 6 tablespoons / 85 grams of cold butter
- a pastry blender is handy for this task, but other methods available.

Add one cup / 235 grams milk, mix quickly with a wooden spoon, drop onto flat un-greased sheet,
bake about 12-15 minutes

Notes:
This is a stiff dough.
I have used whole milk through skim without effect.
If using buttermilk, reduce baking powder by 50%.
Bake / into oven immediately after mixing in the milk; do not mix in advance.
