I've made this 3 times now, and it just gets better with each iteration. Best if you have a pressure cooker.


Cheap, filling, nutritious and delicious.


Cabbage, leek and bean soup

1 head cabbage (med)
2 stalks leeks (med)
1 small onion (or ½ large one) (you want ~ 2/3rd cup diced)
2 strips bacon or some pancetta

1½ cups white beans (or equivalent if canned)

Cook beans in pressure cooker (8 minutes from 1st whistle if not pre-soaked, let cool naturally)
Reserve in a separate bowl


Dice onion and bacon, fry until onion lightly brown in pressure cooker

Slice cabbage and leeks fine (Cuisinart 4 mm blade) add to bacon and onion
Add ½ cup water. Pressure cook 5 minutes from 1st whistle, cool naturally or not.

Take ½ cabbage/leek mixture and blend in Cuisinart or mixie until puree.
Return to cooker, add cooked beans and enough water to adjust consistency.

Adjust seasoning (salt, pepper, chili, whatever!)
Simmer for a bit.
