I am GI-compromised with: reduced esophageal peristalsis, a patulous esophagus which results in GERD, GAVE, gastroparesis, and intestinal pseudo-obstruction which results in malabsorption.

Beef stew seems to be the best thing for me, since: the fiber has been cooked out of everything, it is reasonably rich in protein, which is helpful considering the malabsorption, and it goes down like Pepto, soothing the GERD.

Since I have bad luck with breads, but not potatoes, a steak sandwich with cooked vegetables doesn't work.

I've made the Osso Buco, as detailed on this site, more than a half dozen times. Everyone's loved it. Maybe you should mention to put the marrow on a cracker when the meal is done. The first few times I didn't touch it.
