Hi, I found a free recipes about Chinese Fried Rice and last weekend I just cook per the recipes. It was my first time cooking it but it was taste delicious.

I was told that the rice MUST be COLD or it doesnt turn out right...does it really make a difference....mine turns out sticky either way?

Make sure you add the right quantity of water when you boil the rice, so that the grains don't stick to each other. Heat up 2 tablespoonfuls of oil in a frying pan and saute some chopped garlic in it. Add your vegetables and then the rice. Keep turning over so the rice doesn't get burnt or gluggy. Add your beaten eggs, pepper and salt. Soy sauce can be used to flavor.

In case people are wondering what the "right quantity" of water for rice is - the typical bag of rice will state 2 cups (16 fl oz or 475 mL) water per cup (8 fl oz) of rice, but we find this to be too much water. In fact, 12 oz (1.5 cups) water for 1 cup rice works best for us when we make rice (whether to be eaten as white rice or for future use as congee or fried rice). Something that I have not yet fully understood is that LESS water is needed proportionally as more rice is added. We use 20 oz (2.5 cups) water for 2 cups of rice. I rarely cook more than 2 cups at once, so I don't know the optimal amount of water for larger quantities. People in Thailand cook the best fried rice in the world! They add shrimps and veggies, I'm not sure which ones, something like peppers and peas and carots and onion... It's adorable!

Have you tried adding a little pinch of curcumin? I have tried that before. I added it on top, just before it's almost cooked. It's delicious!

One of my Indian friend cooked fried rice(we were studying together in Upenn)..He has made an amazing dish with a bits of spices from India and i was eating the dish like anything..The spices add an extra taste to the dish..We should also use some spices in some of our dishes...

What I do for my fried rice is put lots of garlic, carrots, green peas, meat balls or hot-dog and lastly, put the beaten eggs. Yummy!
