Anyone knows a true recipe for making this. I tried several using potato starch and still it does not taste like the one in chinatown. Advise?

I don't have a recipe but if you're wondering about the coagulant, traditionally, gypsum( calcium sulfate ) is used but these days it's usually glucona delta lactone( lactone for short or the Chinese know it as fruit pectin ). The sugar syrup is flavoured with pandan and ginger.
