Can anyone tell me if sausage casing is edible? I've seen them remove the casing from the sausage before cooking on cooking shows, but the meat breaks up when I remove the casing from Italian sausages. Do you cook with the casing on and can you eat it?

yes, sausage casing is edible.

most of the time you see people removing the casing it's because they want the meat "of that particular flavor" but not in "sausage form" - that is, they want the meat crumbled up in the dish. you can buy fresh sausage 'not in the casing' - but rarely can you get the varieties of spicing/flavors offered in the cased products.

I like the "snap" of the casing when I bite into it! Dunno why.

Don't worry, it's edible.Here in Italy we cook and eat sausage with their casing...
