This is a special Indian recipe which I invented.
It uses sweet corn as the Base Masala with onions and tomatoes.
1 onion, pureed
1 tomato, pureed
2 cloves garlic, minced
1 small capsicum, finely chopped
1 cup Corn kernels, pureed (blended with ¼ cup milk or water)
½ tbs cinnamon
1 tbs cumin ( zeera)
1 tbs Corriander Powder
½ tbsp black pepper powder
¼ tbsp red chili powder
½ cup of milk
100 gms, button mushrooms, quartered (with black part removed)
4 tbsp Hot and Sweet Maggi Sauce (combination of tomato and red chilly)
salt, according to taste
Heavy Cream or half -half, according to taste.
2 tbsp butter or oil.
Clean and remove the black part from the Mushrooms and cut into quarters. Wash these cut mushrooms and discard the rest.
Sauté onion and garlic together till brown red in a frying pan with butter.
This is actually a thin slice of butter cut from the Amul slab.
Add Cinnamon Powder
Add Tomato Puree, sauté till it leaves oil.
Add capsicum and keep sautéing till it looks like the below image.
Meanwhile blend corn kernels in a blender either with milk or water. I prefer milk.
Now add this corn cream to the capsicum mixture and keep sautéing till the gravy thickens and the corn appears well cooked (about 8-10 minutes).
During this whenever the gravy dries add a little bit of milk, so that masala doesn’t get burned.
Add all the spices, salt and Tomato hot and sweet sauce.
Maggi is an international brand, you might find a different hot and sweet sauce either by Maggi or some other brand in your country.
Now add mushroom and sauté till the gravy again thickens, add left over milk and sauté for another 5 minutes. Close the lid of the pan, so that the mushroom gets cooked properly with steam.
You will know its done when the mushroom leaves water and becomes tender.
Now lower the flame, top with cream, stir well and remove the pan from flame
Serve hot with Indian tortillas or Naan.
You can even add half-boiled peas during addition of mushrooms.
Using Maggi hot and sweet sauce adds a special sweet and sour flavor to this dish, which individual chilly or tomato sauce cannot provide. The gravy isn't chili, as addition of cream negates the chili effect.
Do not like Mushrooms? Use Tofu or Paneer instead.
Health Conscious: Use vegetable oil or olive oil instead of butter and milk instead of cream.
Can try adding coconut milk instead of milk, though I have no idea how that will taste.
