Mackerel Curry
A slow cooker recipe that is easy to do, superbly tasty, and feel good tummy filling.
Ingredients: (per person; add as required).
1 Mackerel Fillet.
2 Carrots.
1 medium Parsnip.
1 stick of Celery.
1/4 of a red Onion.
2 Dessert spoons of Lentils.
2 Dessert spoons of Chickpeas.
2 Dessert spoons of Black eye Beans.
1 Dessert spoon of Yellow Split Peas.
1 Dessert spoon of Green Split Peas.
1 Dessert spoon of Wheat.
1 Dessert spoon of Pearl Barley.
Oats to thicken.
1 clove of Garlic; crushed.
1/2 Teaspoon of Cummin powder.
1/2 Teaspoon of Ground Coriander.
1/2 Teaspoon of Medium Curry Powder.
Salt and Pepper to season.
Method
Peel and dice the; Carrot, Parsnip, Celery and Onion. Place into a slow cooker with the rest of the other dried ingredients. Cover in water and add the spices. Turn on the slow cooker and leave to cook for 5-6 hours etc. set the cooker to Low, Medium, High to suit the time available.
About one hour before serving, skin the Mackerel fillet(s), cut into smallish pieces and add to the other ingredients in the slow cooker.
About 25-30 minutes before serving, stir in the oats and allow them to thicken the Curry. Meanwhile prepare and cook the rice, and then serve with a glass of your favourite tipple. |
