I am making nutella powder

and according to this

the tapioca maltodextrin is a polysaccharides that entrap fats.

I want to know what type of kind of reaction would this be and is there a chemical reaction equation for this because I know for a fact its not hydrolysis

so in short what type of reaction takes place between tapioca maltodextrin and fats. and what would the chemical equation look like.

I have tried looking it up but have gotten nowhere, if there is a link/source to the explanation than that would be fine to.
