Pork is a fairly big 'historical' staple in the Hawaiian diet.
recipes using pineapple and pork are exceedingly abundant.

most use 4-8-10 ingredients to cook the pork with the pineapple accent.
and they mostly fail.

came across this recipe - very simple - and it does a spectacular job on pork chops.
super simple:

salt&pepper the pork chops – allow to mellow at room temp 30-60 minutes.

Make the sauce:
lite, low sodium soy sauce - 1 part (vol)
to 4 parts "pineapple preserves"
{{{ never heard of pineapple preserves - but BAM! there it is on the shelf . . . }}}
1 part Dijon mustard.
mix the soy sauce and the pineapple preserves + Dijon mustard, add finely diced shallots

sear the pork chops in (olive) oil
apply soy/pineapple/scallion mix, cook pork chops on low heat until done.
