I'm hooked on Hainanese Chicken...its so simple.

Boil water with 1/2 cup ginger and a bunch of green onions
When boiling, drop in a medium chicken with 3 tblspoons salt
simmer for 5, then shut off heat. Wait for 30 minutes.
While chicken is cooling, cook rice with broth.

DOne this maybe 10 times...each time a success. BUT i am trying to perfect the gingery hot dipping sauce. Anyone have any ideas? Im already doing the soy/vinegar/scallion one.

Hi for the gingery hot dipping sauce, you may use mixer machine to mix the ginger and small green chilly type then add in some vinegar and salt.
