I have discovered that the George Forman grill does a good job of toasting bread for bruschetta. Slice Italian bread about 3/4 inch thick, brush lightly with olive oil, and grill for about 4 minutes. Chopped tomatoes and feta cheese make a good topping -- also some black olives. This is especially good breakfast food with scrambled eggs. Other ideas for toppings welcome. I'm interested in fast, creative ideas for feeding one or two in a hurry.
