I need some help. I made an Indian dessert known as Gulab Jamun, that is supposed soak in simple syrup but after letting it cool the simple syrup crystallized. How do I de-crystallize the syrup.

the syrup probably got too hot.

reheat very gently at low temp/flame - you can add a teaspoon of corn syrup if you'd like (old trick to prevent crystals) - and allow to cool slowly.

simple syrup is not real "heavy" ie thick - if it is thick when warm, dilute with water or whatever liquid you're using.
