What would be your biggest cooking challenge? Mine would be making cheese(always wanted to do this), oh and croissants.

Making cheese is easy. Making great cheese is hard (and, I guess, making hard cheese is great).

Other challenges:

Hollandaise over direct flame.

I think you're right in identifiying a proper croissant.

Puff pastry.

Strudel.

Pastizzi (a maltese amalgamation of the prior two)

A proper wedding cake.

A perfect steak.

Well, perfection in any other regard.
