Hello!

I was wondering if y'all had any suggestions for moo goo gai pan, preferably made with the brown sauce rather than the lighter chicken broth based sauce many Chinese resturants here in American make it with.

Cheers!

Hmmm... This is a pretty dark Brown sauce, but it is chicken-broth based.

1/2 cup chicken broth
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sherry
2 tsp sugar
1 tsp tomato ketchup
1 finely minced scallion (white and light green parts)

1 teaspoon cornstarch in 1 tablespoon water.

Bring the first seven ingredients to a boil in a small saucepan. Reduce heat and stir in the cornstarch and water to thicken.

I've often increased the soy sauce in this recipe, but that's just my flavor preference.
