In most recipes, substituting honey for sugar seems to be linear -- 1 cup sugar = 1 cup honey. I'm not sure that's always correct, but I have seen it in various places. What I'd like to do is substitute some, not all, of the corn syrup, maybe 50/50 with honey. Has anyone done this? Has anyone done 100% honey? I love the flavor of honey and it seems it would work very well with pecan pie.
