I make pretty good sandwiches, but I'm always on the lookout for a new one, & I've been reading about Erik's Delicafe Pilgrim's Progress. The ingredients for the filling are all to hand, but despite a lengthy web-search I need some idea of what goes into the 'secret goo' which seems to be an essential component of the finished product.

Is it tomato, pesto, chilli, mayo based? I know it's a family secret, but I'd love an idea of where to start with it. Can anyone help?
